In a delightful culinary collaboration, Lidl Food Academy has shared two enticing recipes that highlight the versatility of fish and other nutritious ingredients. These dishes, featuring Thai Red Curry with Fish and a Salad with Sardines, Lentils, and Dates, promise to elevate any dinner table with their vibrant flavors and healthy components.

### Thai Red Curry with Fish

This dish combines the rich flavors of Thai cuisine with the freshness of fish, making it a perfect choice for seafood lovers. The recipe calls for a whole fish, skinned, and a variety of ingredients that come together to create a fragrant curry.

**Ingredients:**

- 500g whole fish, skinned

- 3 tablespoons oil

- Salt and pepper, to taste

- 2 tablespoons red curry paste

- 400g canned coconut milk

- 200g green beans, cut into 3 cm pieces

- 2 tablespoons lime juice

- 1 teaspoon grated lime zest

- 2 teaspoons brown sugar

- Fresh coriander leaves, for garnish

- Fresh basil, for garnish

- Lime, sliced, for garnish

- Hot red pepper, sliced, for garnish

**Instructions:**

1. In a large frying pan, heat 1 tablespoon of oil over medium heat. Add the red curry paste and sauté for about one minute to release its aromas.

2. Stir in the coconut milk and bring to a boil. Cook for three minutes.

3. Add the green beans and boil for an additional two minutes. Remove from heat and mix in the lime juice, lime zest, and brown sugar.

4. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

5. Using a sharp knife, make diagonal cuts into the flesh of the fish down to the spine. Brush the fish with the remaining oil and season with salt and pepper.

6. Heat a large non-stick pan and cook the fish until browned on both sides. Transfer the fish to the baking dish and bake in the oven for 30 minutes.

7. To serve, pour the curry into a large deep dish and place the cooked fish on top. Garnish with fresh coriander, basil, lime slices, and sliced hot red pepper. This dish pairs wonderfully with rice.

### Salad with Sardines, Lentils, and Dates

This salad is not only nutritious but also offers a unique blend of flavors and textures, making it a perfect accompaniment to any meal or a light main course.

**Ingredients:**

- 12 canned sardines (2 cans)

- 400g carrots, cut into thick sticks

- 1 large red onion, thinly sliced

- 2 cloves garlic, finely chopped

- 30ml (2 tbsp) olive oil

- 1 tablespoon honey

- 1 ½ teaspoons sweet paprika

- ½ teaspoon cinnamon

- ½ teaspoon salt

- ½ teaspoon pepper

- 200g fine lentils

- 30ml (2 tbsp) vinegar

- 1 ½ teaspoons mustard

- 100g dates, finely chopped

- 50g almonds, finely chopped

- 2 tablespoons parsley, finely chopped

- 1 tablespoon fresh mint, finely chopped

- Hummus, for serving

**Instructions:**

1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

2. In a bowl, combine the carrots, onion, garlic, olive oil, honey, paprika, cinnamon, salt, and pepper. Spread the mixture on the baking sheet and bake for 30 minutes, stirring halfway through, until the vegetables are soft and caramelized.

3. Meanwhile, boil about one liter of salted water and add the lentils. Simmer for 20-25 minutes until slightly crispy, then drain and cool them in ice water to stop the cooking process.

4. Once cooled, drain the lentils again and mix them with olive oil, vinegar, mustard, dates, almonds, parsley, mint, salt, and pepper.

5. To serve, spread hummus on a plate and layer the lentils, roasted carrots, and sardines on top, drizzling with a bit of extra olive oil.
