- 50ml dry white wine

- 2 tablespoons olive oil
- 100g peeled almonds, finely chopped
- 100g fresh breadcrumbs
- 1 heaped tablespoon grated Parmesan
- 2 tablespoons parsley, finely chopped

1. In a heavy skillet, heat the olive oil over medium-high heat. Add the chopped onion, garlic, and parsley, stirring often for a few minutes until softened.
2. Stir in the chili powder and add the pre-cooked prawns. Cook for a few minutes while stirring occasionally.
3. Pour in the dry white wine and allow it to cook for about 3 minutes until it evaporates completely. Season with salt to taste.
4. In a separate non-stick pan, heat the olive oil for the conza. Combine the chopped almonds, breadcrumbs, grated Parmesan, parsley, and salt. Cook over medium heat, stirring constantly until the mixture turns a golden color.
5. Serve the shrimp immediately, topped with the crispy conza for added texture.
**Anari Mousse with Spoon Sweet**

**Ingredients:**
*For the Fresh Anari Mousse:*
- 300g fresh unsalted anari cheese
- 125g whipped cream (chantilly)
- 50g honey
- 1/2 teaspoon cinnamon
- 2 tablespoons rose water
*For the Crispy Sheets:*
- 3 phyllo sheets
- 100g butter (melted)
- 30g granulated sugar
- 1 teaspoon cinnamon
*To Serve:*
- 60g walnuts, finely chopped unsalted
- 4 spoon sweets (lemon or bitter orange), cut into slices
- 4 tablespoons carob syrup or sesame
- 2 tablespoons icing sugar, for sprinkling
- 4 tablespoons syrup from the spoon sweet
- Microgreens (e.g., young basil or mint leaves) for garnish
**Instructions:**
1. Preheat the oven to 180°C. Lay the first phyllo sheet on a flat surface and brush it lightly with melted butter. Sprinkle with a little icing sugar and cinnamon. Repeat the layering with the second and third sheets.
2. Cut the layered phyllo into 12 uniform rectangular pieces and transfer them to a baking tray lined with non-stick paper. Cover with another piece of non-stick paper and place a second baking tray on top to keep the sheets flat. Bake for 10–12 minutes until golden brown and crispy. Let cool.
3. In a mixer, combine the fresh anari, honey, cinnamon, and rose water. Beat until the mixture is fluffy. Gently fold in the whipped cream using a spatula to maintain volume. Transfer the mousse to a pastry bag and refrigerate until ready to serve.
4. To assemble, place the first crispy sheet in the center of a plate. Use the pastry bag to pipe the mousse in rosettes on top. Add spoon sweet in between layers. Repeat with the second and third sheets.
5. Garnish with slices of spoon sweet, carob syrup, chopped walnuts, and a dusting of icing sugar. Finish with microgreens for a fresh touch.
