The interior uses earth tones, natural materials and custom-made furniture, along with a mural by Agata Leszczynska that extends across the ceiling, themed around water. The kitchen serves contemporary continental cuisine with Cypriot influences. It opens in the morning for hotel guests and walk-in visitors, serves à la carte lunches, and offers à la carte dinner in the evening. Starters include sea bass ceviche with aji amarillo, tiger’s milk and passion fruit; tuna tartare with truffle ponzu, guacamole and tempura shiso; and grilled octopus with babaganoush, Florina pepper, feta crumble, potato puff and vierge sauce. Salads include the Orangery salad, with salt-crust baked beetroot, fennel, seasonal leaves, kumquat compote, orange, manouri and toasted hazelnuts. Mains include wild sea bass with baked celeriac espuma, bisque and fregola; salmon with miso glaze; handmade halloumi and fresh mint ravioli; and grilled meat cuts. The restaurant runs a buffet lunch every Sunday. The wine list includes labels from Cyprus, Greece and other wine-producing regions, alongside international labels and champagnes.
