The complex sits on the seafront avenue in Limassol and houses three concepts, each with its own identity. Musa and Oris Fire Kitchen & Bar are run by chef Athinagoras Kostakos. Nook Food & More operates as an all-day, multi-concept space. Musa Musa serves Greek and Eastern Mediterranean food. The space has high ceilings, earthy tones and an open kitchen. The menu is built for sharing. Dishes include smoked taramasalata with semi-dried tomato, moussaka croquettes with feta, and sea bream “petali” with lemon, capers and olives. There is a wine list, and cocktails supplied by the Athens bar The Clumsies. Oris Fire Kitchen & Bar Oris Fire Kitchen & Bar is built around open-fire cooking. The restaurant has large glass windows, natural materials and dark tones. Athinagoras Kostakos is culinary director, and Andreas Rinas leads the kitchen. The menu includes raw preparations, cuts of meat and open-fire cooking. Dishes include tuna tostada with avocado, smoked salt and coriander, and beef tagliata with purslane and wine sauce. The bar also serves cocktails from The Clumsies. Nook Food & More Nook Food & More combines specialty coffee, brunch, a deli, a pizzeria, a bakery, a patisserie and a gelateria, serving customers from early morning to evening. Brunch dishes include bagels with smoked salmon, eggs Benedict and burrata sandwiches. The pizzeria uses long-fermentation dough. The deli, bakery and retail shop sell food to eat on site or take home, and the venue also offers take away and delivery. Athinagoras Kostakos: “We brought our philosophy to Cyprus” What were your first impressions of Cyprus? I feel like I’m in Greece, I don’t see it as a foreign country. And with the food, we only really have some small differences. You get so much sunshine that you don’t produce as many vegetables, but the ones you do have are better than in Greece. We don’t have oregano as strong as yours, and the cheeses have a more intense flavour too. The first time I ate koutrouvi here, I realised Cyprus has better capers than the Cyclades. When I find the time, I go to the coffee shops and taverns, I visit the villages and I love the food, the poulles, the broad beans, I look for real halloumi. I remember the first time someone brought me kolokasi, I didn’t know how to handle it, I didn’t know how to cook it. It was only when I ate it cooked the way you cook it here that I understood the beauty of the ingredient. Today I have kolokasi on all my menus. I think it’s exceptional. How did you approach the food at Musa, and how at Oris? Musa is my meze restaurant, where I serve Greek, Cypriot and international cuisine, with small plates that build a big canvas on the table, one that looks like a painting if you see it from above. That’s generally how Greeks and Cypriots eat, we like variety. At Oris, on the other hand, I have my meat-focused signature. It’s a restaurant that speaks to smoke, fire, spit-roasting, good cuts, dishes that are more sophisticated but built on good ingredients. That’s how I’ve divided them: Musa is my Greek signature, and Oris is my open-fire home. Is your own signature the core that connects them? What connects all my restaurants around the world is that I have close collaborators in each one. Nikitas Pyrgis has been with me for 12 years, he’s my partner and now lives permanently in Cyprus. Andreas Rinas is the chef who’s been with us for nine years, and Alexandros is a chef who’s been cooking since he was very young, at Meraki in London. So I didn’t send Cyprus a menu and ten recipes, I sent my closest collaborators, because I want them to bring the mentality that defines my restaurants to Cyprus too.
